1 pt. Cottage cheese
1 lb. Sausage
4-6 ea Green Onions or 1 small whole white onion chopped
1 can Black Olives, sliced
2 cups Grated Sharp or medium cheese
1 pkg Parmesan Cheese, fresh
12 Eggs, beaten
1 can Jalapenos, chopped
1-2 Fresh Tomatoes, diced
1. Grease 9"x13" pan. Mix Cottage cheese, meat (cook the meat first), tomatoes, jalapenos, onions and olives layer on bottom of pan.
2. Beat eggs pour over first layer. Top with both cheeses. Bake at 350 degrees for 30-40 minutes or until fork comes out clear.
Servings: 4-6 serving
