Recipe from Anna F. Pratt of Mesa, Ariz.
1 large box frozen strawberries
1 large box strawberry Jell-O
1 1/2 cups boiling water
1 1/2 cups cold liquid (I use juice from strawberries & cold water)
1 8oz pkg cream cheese (softened)
1 pint whipping cream (whipped)
3 teaspoons sugar
1 teaspoon vanilla
Thaw strawberries and retain juice for use in jello.
Dissolve Jell-O in boiling water, mixing for 1 minute. Add the cold liquid, place in refrigerator, and let set until jelled.
Place Jell-O into a blender with cream cheese until light and fluffy.
In small mixing bowl whip cream adding sugar and vanilla to it until it will hold a soft peak. Fold strawberries into Jell-O and cream cheese mixture, then fold this mixture into the whipped cream.
Pour into a mold and let set.
