Recipe from Jessica Dodd of Mississippi
Pie:
3/4 cup sugar
pinch salt
4 Tbs flour
4 Tbs coco
3 eggs separated (beat yolks w/fork)
2 cups milk
1 Tbs butter
1/2 tsp vanilla
1 baked pie shell (Score pie shell in bottom and on sides with tines of fork. Bake at 350 degrees until shell is cooked.)
Meringue:
3 egg whites, stiffly beaten
1/4 teaspoon cream of tarter
6 tbs sugar
In a 4 quart saucepan, mix sugar, salt, flour and coco together well. Add milk and mix well. Cook over medium heat until mixture thickens. Add beaten egg yolks and cook one additional minute. Add vanilla and butter and mix well.
Pour mixture into 9 inch baked pie shell. Top with Meringue.
Bake in 350 degree oven until Meringue is ready. Meringue: 3 egg whites stiffly beaten 1/4 teaspoon Cream of Tarter 6 Tbs Sugar
