4 - 6 strips of cooked bacon - crumbled (retain the drippings0
3 - 4 small zucchinis - chopped
2 - 3 large tomatoes - chopped
1 large sweet onion - chopped
3 - 5 med thickness slices of Velveeta Cheese
2 - 3 tbsp chicken soup starter
salt to taste
pepper to taste
Cook bacon in large sauté pan. Remove bacon from pan and put aside. In same pan, add chopped onions to bacon drippings; sauté until tender. Add in chopped zucchini and cover. Cook 10-15 minutes on low until zucchini is tender. Add in chicken soup starter, crumbled bacon, salt and pepper. Fold ingredients together then place tomatoes on top of mixture and cover with Velveeta. Place cover on pan again for about 5-10 min until cheese is melted. Serve immediately.
This recipe serves 6-8.
