Recipe from Jessica Fuller of Wash.
chicken breasts skinned or not skinned (doesn't matter)
2 medium sized lemons
1 clove of garlic (use as much you like)
1/2 cup margarine (melted or vegetable oil)
herbs (to taste)
Place the chicken breasts in a pan and spread the melted margarine or vegetable oil on top of the chicken. Mince the garlic and then sprinkle it over the chicken. Now bake the chicken at 350 Degrees for 15 minutes. Then flip the chicken over and bake for another 15 minutes. Next squeeze the juice out from the lemons over chicken. Then cut a lemon into pieces and place the pieces in a pan with the chicken. Cook for an additional 30 minutes. Now add in your favorite herbs to taste and serve with Chicken and Garlic Rice a Roni or pasta of any kind.
