- 4 chicken breasts
- 6 tablespoons fresh herbs (rosemary, thyme, parsley, oregano)
- 1 cup water ½ cup extra-virgin olive oil
- 1 teaspoon lemon zest salt and pepper
Place the chicken breasts in a large container with the oil, herbs, garlic, lemon zest and pepper, and marinate overnight.
Drain excess marinade and season with salt and pepper. Place the breasts on a medium-heat grill and cook for about 8-10 minutes. Flip the chicken, cooking it for another 8 minutes. Check doneness with a thermometer or by cutting a small slit in an inconspicuous place. Adjust seasoning.
Serves 4.
