1.5 lb ground beef
1 med onion finely diced
1 large can diced tomatoes
1small can tomato sauce
1 can dark red kidney beans, drained
2TBS chili powder
1tsp salt
1/2tsp pepper
1 box Jiffy cornbread mix
Brown ground beef and onion. Drain off grease. Return to pan, adding spices, tomatoes, sauce and kidney beans. Simmer for 10 mins. Preheat oven to 400. Mix Cornbread mix according to package. Place chili mixture in baking pan. Spoon cornbread mixture on top, covering the chili mixture. Bake for 20 mins in oven.
