4 chicken breasts, pounded
1/2 C. bread crumbs
Salt and pepper to taste
2 tsp. cumin
1/4 C melted butter
4 to 8 Monterey jack cheese slices
1 egg, beaten
6 C. flour (to dredge chicken in)
Pre-heat oven to 350 degrees. Pound chicken, mix seasoning in bread crumbs. Place chicken in flour, egg, and finally rub in pile of bread crumbs.Place one slice of jack cheese on the chicken breast and roll up. Insert toothpick through chicken breast and drizzle with butter. Cook for 30 minutes and enjoy.
