1 ciabatta bread ( or foccacia )
1 medium ripe tomato
Olive oil for drizzling
1. Slice bread horizontally. Slice tomato in half. Rub tomato inside all over top of bread halves.
2. Drizzle with olive oil--be generous! Put in hot-400 deg oven until toasted. Keep watch, will burn quickly.
3. Use this along with salad, soup, or as an appetizer for a part or as I do--by itself for a quick supper with a glass of wine.
Yield: 12 servings
