Chef Pete McMahon from the Rusty Rudder in Dewey Beach, stops by the DelamrvaLife kitchen to make chocolate banana empanada.
Chocolate Banana Empanadas
- 2 Sheets Puff Pastry
- 3 each Bananas
- 1/2 c Chocolate chips
- 1T Sugar
- 1/2t Cinnamon
- 1 ea Egg
Peel, and lightly mash the bananas. Mix in chocolate chips and cinnamon sugar mixture. Cut out circles of puff pastry approximately 4 inches in diameter, and brush with egg wash. Spoon some of the banana mixture onto the center of puff pastry, and fold in half. Crimp with fork and place on baking sheet. Bake at 350 for approximately 10 minutes until golden brown.
Vanilla Bourbon Caramel Sauce
- 2 c Sugar
- 1/2 c Water
- 1 T Light corn syrup
- 1 c Heavy Cream
- 1/2 c Bourbon
- 1 each Vanilla Bean
Mix together sugar, water, and corn syrup, and place in heavy saucepan over moderate heat. Bring to a simmer, and cook for approximately 6 minutes until it starts to turn amber in color. Remove from heat, and slowly add cream, bourbon and vanilla.
