There’s a lot more that goes in a school day than just class and homework.

We’re learning about some of the neat programs in the Cape Henlopen School District. The president of the Cape Henlopen Educational Foundation, Jeff Gordon is here to give us all the details.

The Educational Foundation’s mission is to provide students with the tools they need to be successful at school and in life. Jeff also talks about funds for teachers with the Teachers Excellence Grant Program, which they can use to purchase math and science games, reading materials and software that enrich the curriculum.

Jeff says jobs in the STEM (science, technology, engineering and math) field are going to be the jobs of the future so they are preparing their students now. There are different programs in the elementary school levels such as robotics, all the way up to the high school level where they are building mobile apps.

There are students in the Cape Henlopen School District who are in need. Jeff talks about a College Tour Program where they help get limited income students to visit colleges they are interested in.

“In many cases, they are the first members of their family to graduate from college,” Jeff says.

The community has an opportunity to help out these students. Their annual fundraiser, Winter Jam, is Friday, Jan. 19, from 7 pm-11 pm at the Rusty Rudder.

In addition to learning about the Cape Henlopen Education Foundation and their upcoming Winter Jam event, we’re also going to learn about some of the food that will be featured at Winter Jam. Chef Jen Bradour from Plate Catering is in the kitchen today to make Winter Jam Stuffed Cucumbers.

Plate Catering’s Winter Jam Smoked Salmon Stuffed Cucumber

About 30 bite sized pieces

Ingredients: 

  • 1 English cucumber, split lengthwise and deseeded
  • 8 oz cream cheese
  • 4 oz smoked salmon/lox, chopped
  • 3 Tb, chopped fresh dill
  • Fresh cracked pepper
  • 2 Tb capers
  • About 12 cherry tomatoes, thin sliced
  • 2 Tb minced red onion

Instructions: 

  1. Mix the cream cheese, dill, salmon and pepper together.
  2. Put in the center of the cucumbers.
  3. Top with the rest of ingredients.
  4. Slice and enjoy.
