Meals On Wheels Delaware provides financial and volunteer resources to meal-delivery programs statewide that offer nutritious meals, independence and a personal connection to homebound seniors.

Jennifer Halliday is the Marketing and Design Coordinator for Meals On Wheels Delaware and is here to tell us about the 16th Annual Celebrity Chefs’ Beach Brunch Fundraiser this weekend. It will be a morning of great food and fun as guests will be able to partake in tastings by top beach chefs, craft beer, wine & brunch cocktails.

The fundraiser on Sunday, October 7th from 10:30 am – 1:30 pm at the Rusty Rudder in Dewey Beach, Delaware!

We are also very excited to have one of Chef Jason Bostaph from The Café on 26. He’s going to show us how to make their Café Signature Salmon Dish.

Café Signature Salmon Dish Recipe

  • One 6-8oz. Salmon steak
  • 1/4 cup parmesan
  • 1/4 cup prepared mashed potatoes
  • 1/4 cup kettle cooked potato chips
  • 2oz jumbo lump crab
  • 1/4 cup heavy cream
  • 1 tablespoon fresh dill
  • 1 tablespoon butter

1. Sear salmon in oven safe saute pan.2. Combine chips, mashed potatoes and parm and top salmon with mixture.3. Cook on 400 degrees for 8-12 min4. While salmon is cooking combine cream and dill in small sauce pot and reduce 50%. Once reduced remove from heat and swirl in butter and crab. Salt and pepper to taste.
