Taco Grilled Cheese & Queso Tomato Soup

Beef Taco Grilled Cheese

1 lb ground beef1 packet of low sodium taco seasoning1/2 tsp pink Himalayan sea salt1/2 tsp black pepper1 tsp garlic powder1 tsp onion powder1 tbsp. of freeze dried cilantro1/2 jalapeno diced small2-3 tbsp. red onion diced smallAmerican CheeseShredded Mexican CheeseButterCiabatta BunsDirections:1. Cook ground beef then add taco seasoning, salt, black pepper, garlic powder, onion powder, dried cilantro, jalapeno, and red onion.

    Take ground beef mixture off the heat and set aside.

    , cut the ciabatta rolls open (You can use low carb, high fiber bread as well)For the ciabatta buns hollow them out by removing some of the bread on the inside of both sides. This will allow for more room to add filling.Add some of the shredded Mexican cheese to the bun, then add the ground beef mixture and one slice of American cheese.4. Heat a skillet in medium, spray skillet with non stick spray and add 1 tbsp. of butter. Add the sandwich to the pan and cook on each side for 2-3 minutes or until both sides are golden brown and the cheese is melted.5. Enjoy with soup or a salad!Tip* You can brown both sides and then add the grilled cheese into a 400 degree oven to let the cheese melt. This would be a great idea if you’re prepping for a crowd.

    Queso Tomato Soup

    1 can tomato sauce1 can diced fire roasted tomatoes1 cup of jarred queso dip1 tsp garlic powder1 tsp onion powder1 tbsp. freeze dried cilantro1 tsp low sodium taco seasoning1/2 tsp of red pepper flakes1 tsp smoked paprika1/2 cup heavy creamGarnish (optional)Sour creamAvocadoSliced Red onion1. In a medium sauce pan add tomatoes sauce, fire roasted tomatoes, and queso dip. Heat pan on medium, and  stir.2. Next, add garlic powder, onion powder, dried cilantro, taco seasoning, pepper flakes, and smoked paprika.Heat on low-medium for 5-8 minutes.3. Add heavy cream stir for 1-2 minutes.4. Enjoy with a grilled cheese, or a salad!

    What You’ll Need

    • 6 cups corn flakes cereal, crushed
    • 1 teaspoon paprika
    • 1/2 teaspoon onion powder
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon salt
    • 1/2 teaspoon black pepper
    • 2 eggs
    • 1/2 cup milk
    • 2 pounds boneless, skinless chicken breasts, cut into 1-inch chunks
    • 3/4 cup barbecue sauce
    • 1/4 cup honey

    What to Do

    1. Preheat oven to 400 degrees F. Coat a baking sheet with cooking spray.
    2. In a medium bowl, combine cereal, paprika, onion and garlic powder, salt, and pepper; mix well and set aside. In a large bowl, whisk eggs and milk. Add chicken to egg mixture and let sit for 15 minutes. Remove chicken from egg mixture and toss in cereal mixture, coating on all sides. Place on baking sheet. Bake for 15 minutes or until golden brown and no longer pink in center.
    3. Meanwhile, in a small saucepan over medium heat, combine barbecue sauce and honey, and heat until warm. Drizzle chicken bites with sauce mixture and serve.
