We are in the DelmarvaLife kitchen with Jimmy’s wife, Carol. She shows us how to make “chaffles,” and explains how she managed to shed 40 pounds with this tasty treat.

White Bread Chaffle

1 Egg

3 Tablespoons Almond Flour

1 Tablespoon Mayo or Cream Cheese

¼ Teaspoon Baking Powder

1 Teaspoon Water

Preheat mini or regular waffle maker;

In a bowl, whisk egg until beaten;

Add almond flour, mayo or cream cheese, baking powder and water;

Pour half the batter for mini or entire batter for large waffle maker;

Allow to 3 – 5 minutes to cook;

Carefully remove and set aside to crisp up

Spices can be added

Basic Chaffle Recipe

½ Cup Shredded Cheddar Cheese (or any cheese), Large Shred does better

1 Egg

Beat egg and add cheese, mix

Heat Waffle Iron

Place half the batter on the waffle iron (mini) or entire batter if using regular

iron

Spices can be added to the batter: Red Pepper Flakes, Everything Bagel,

Garlic/Parmesan, Old Bay

Bagels

1 ½ Mozzarella Cheese

2 oz Cream Cheese, (soften in microwave)

1 ½ Cups Almond Flour

2 Eggs

1 Tablespoon Baking Powder

2 Tablespoons Shredded Parmesan Cheese

Mix all ingredients together and let sit overnight in the refrigerator;

Form dough into bagel shapes;

Sprinkle with seasonings like Everything Bagel or your choice;

Bake at 350 degrees for approximately 20 minutes
