Spicy Tomato Jam

Ingredients

1 ½ pounds Roma tomatoes, coarsely chopped

2 large cloves garlic, minced

1 small yellow onion, chopped

1 cup sugar

1 tablespoon ground ginger

1 teaspoon ground cloves

1 teaspoon ground cinnamon

1 teaspoon ground cumin

½ teaspoon kosher salt

¼ to ½ teaspoon red pepper flakes

3 tablespoons rice vinegar

1. Combine all of the ingredients in a saucepan. Bring to a boil and reduce heat to

a simmer. Cook uncovered until very thick, about 1 ½ hours. Stir occasionally,

especially as the jam thickens. Remove from and allow to cool.
