We’re learning how to make Pineapple Upside-Down Cake…in the microwave.

Ann Taylor, of Princess Anne, stops by the DelmarvaLife Kitchen to show us how it’s done. The recipe is below.

Microwaved Pineapple Upside Down CakeIngredients:Topping:– 4 T. butter/margarine– 1/2 C. packed brown sugar– 1 (20 oz.) can pineapple slices, drained (reserve juice)– maraschino cherries (optional)– pecan halves (optional)Cake Batter:– 1 1/2 C. yellow cake mix *– 1/2 C. pineapple juice (from reserve)– 1 egg* standard cake mix you will use 1/2 the box OR use a full size box of JIFFY cake mix.Directions:1. Using a microwave safe cake pan, melt the butter/margarine in the microwave using 30 second increments.2. Stir the brown sugar into the melted butter/margarine until dissolved, spreading evenly.3. Arrange the pineapple slices on the brown sugar mixture. If desired, place a maraschino cherry in the center of the rings and pecan halves on the outer edge.4. In a mixing bowl, combine the egg and reserved pineapple juice until well mixed.5. Blend the cake mix into the egg/juice mixture gently stir until dry ingredients are moistened.6. Spoon batter on the pineapple rings covering completely.7. Microwave at full power for 8 minutes. Cool in microwave for 4 minutes.8. Invert** cake onto a serving plate.** place serving plate over the cake pan – HOLDING both securely – then quickly invert. May need to place a ring or cherry on to the top of the cake.
