We’re putting a Mediterranean twist on a salmon dish in the Kirby and Holloway Kitchen.
Executive Chef Sheryal Matthews, with 404 Taphouse in Denton, Md. is teaching us how to make Blackened Mediterranean Salmon. We also pair the dish with a wine spritzer.
Blackened Mediterranean Salmon
Ingredients:
- Salmon
- Blackened Seasoning
- Spinach
- Butter
- Black Olives
- Roasted Tomatoes
- Feta Cheese
- Salt
- Pepper
- Garlic
- Parsley
- Old Bay
Directions:
- Mix roasted tomatoes, black olives, feta cheese, salt, pepper and garlic together and let sit.
- Put blackened seasoning on salmon and add butter to the pan. After pan is hot and butter is melted, add salmon to the pan and cook on each side for two minutes.
- In another pan, melt more butter and saute spinach.
- Plate a bed of spinach on a plate and add the salmon on top.
- Top with mix made in step 1.
- Add parsley and Old Bay.
