We’re having a pumpkin party!

We’re in the Kirby & Holloway Kitchen with Chef Sharliena Berry-Jenkins, owner of Karmic Creations Catering. She’s making a pumpkin sausage pizza, and pumpkin tomato soup. The recipes are below:

Pumpkin Tomato Soup

Seasoning mixture:

1/2 tsp dried basil

1 tsp cinnamon

1/2 tsp ginger

1/2 tsp turmeric

1/4 tsp cayenne pepper

1/4 tsp all spice

1/4 tsp garlic powder

Sat to taste1 regular sized can of tomato sauce

1 cup can pumpkin

1 1/2 cups plain yogurtIn a sauce pan add seasoning mixture, tomato sauce, and pumpkin. Mix together, heat on medium until warmed but not bubbling.Remove pan from heat.

Add yogurt to tomato and pumpkin mixture.Serve Immediately.

Garnish with more yogurt, nuts and parsley.

 

 

Pumpkin Sausage Pizza

Dough fresh premade 16 oz

2 tsp Olive oil

1 tsp Italian seasoning

8 oz Fresh Mozzarella Cheese diced small

1 tsp Parmesan cheese

1 1/4 cup Ground Sausage

1/2 Sliced Onion

1 Cup Kale finely diced

1 tsp Garlic Powder

1 tbsp Corn meal

Canned Pumpkin

Nonstick cooking spray

Brown Sausage in skillet.

Add onion, and kale. Sauteed lightly.

Add cumin, and garlic.

Set aside for topping pizza.

Preheat Oven to 400.

Spray pan with nonstick spray.

Sprinkle a little cornmeal on pan.

Press dough evenly into pan.

Drizzle dough with olive oil and sprinkle with Italian seasoning and parmesan cheese.

Pre bake for 5 minutes.

Remove Crust from oven.

Cover evenly with a few teaspoons of canned pumpkin.

Add sausage, onion kale mixture.

Top with diced mozzarella cheese.

Bake 8 minutes on 400 degrees.

Broil on low for 1-2 minutes until brown on top.
