Have you ever heard of a Kaiserschmarrn?
The Kaiserschmarrn is a traditional recipe from Tyrol. Kaiserschmarrn means “imperial mess,” because it looks like a mess when it is being prepared, but the emperor used to love it!
Thierry and Nathalie, owners of Kaisy’s Delights in Rehoboth and Lewes, stopped by the Kirby and Holloway Kitchen to show us how it’s done.
Thierry and Nathalie were born in Nice, France and moved to Delaware four years ago. They really enjoyed Kaiserschmarrn and making them had turned into a family tradition. So they decided to open up a place that sold Kaiserschmarrn in this area. Thierry and Nathalie opened up Kaisy’s Delights in Rehoboth four years ago and they opened their Lewes location a year and a half ago.
Check out the recipe below to make a Kaiserschmarrn at home, or stop by one of their locations. You can add fruit, ice cream, or breakfast meats and eggs to the dish. They also serve coffee and potato latkes.
Kaisy Recipe (serves four)
- 4 eggs
- 4 tbsp granulated sugar
- 4.5 oz flour
- 2 oz rum
- 4 oz vanilla extract
- 2 oz of european style butter
- 2 oz of raisins
- 4 pinches salt
- 13 oz milk
- powder sugar
Directions:
- Separate yolks from whites
- in a mixer bowl stir granulated sugar and yolks
- Add salt, flour (step by step) and milk, then, vanilla and rum. Get a nice creamy mixture
- whip egg whites
- incorporate egg whites to the mixture
- warm up a skillet, add some butter and pour your final mixture in
- spread the raisins on the top
- cook 5 to 10 ‘: the Kaisy must be dark blond in the bottom
- With a spatula, cut in 4 pieces and flip. Add butter
- Cut again to smaller pieces
- While it’s cooked on both sides it’s ready to eat
- serve on plates and spread powder sugar on the top
