We are really looking forward to sharing with you all the exciting happenings at Manna Cafe in Chincoteague.
Manna Cafe was recently nominated on the Readers’ Digest website as one of the nicest places in America. We’ll hear how we can all help the team there officially win that title. We’re also stepping into the Kirby and Holloway Kitchen to learn how to make one of the cafe’s most popular dishes a Southwest Fiesta Bake.
Southwest Fiesta Bake
Ingredients:
- 3 Tbsp olive oil
- 1 medium onion – chopped
- 1 lb. ground beef
- 1 pkg. taco seasoning
- 1 (28 oz.) can diced tomatoes
- 1 (24 oz.) jar pasta sauce
- 2 cups chunky salsa
- 3 cups shredded cheddar cheese
- 8 flour tortillas (8″)
Directions:
- Preheat oven to 350 degrees
- Heat olive oil and saute chopped onion
- Add ground beef and stir until browned
- Add taco seasoning, diced tomatoes and pasta sauce
- Cook that mixture for about 10 minutes
- Spray 9″ x 13″ glass baking dish with oil
- Spread 1 cup of beef mixture (approx. 3.5 cups) on top of tortilla layer
- Spread 1 cup chunky salsa
- Top with 1.5 cups cheddar cheese
- Place 4 tortillas on top
- Spread remainder of beef mixture on top
- Spread 1 cup chunky salsa on top
- Sprinkle remaining cheese on top
- Cover with tin foil (spray inside with oil)
- Bake for 30 min.
