Summer Superfood Salad

Fresh, light, and healthy.Today we welcomed Dr. Catherine Smoot-Haselnus into the DelmarvaLife kitchen to show us some summertime meals that will do our bodies good.

Salmon SaladCombine following ingredients:

  • 1 1/2-2 lbs salmon – grilled, chilled and flaked into large pieces
  • 1 c. small diced celery
  • 1/2 c. finely chopped red onion
  • 2 T. parsley & Shishu leaves – finely chopped
  • 2 T. small capers
  • 2 T. lemon juice & zest
  • 2 T. olive oil
  • pinch of salt
  • 1/2 tsp. black pepper

Chicken SaladCombine following ingredients:

  • 4 poached chicken breasts shredded into bite sized pieces (boneless, skinless)
  • 1 C. diced celery
  • 1 1/2 C. seedless grapes cut in half
  • pecan halves & almonds
  • mayo
  • blue cheese

DressingCombine following ingredients:

  • 1/4 C. lemon juice & zest
  • 1/2 C. plive oil
  • 1 T. dijon mustard
  • 1 tsp. honey
  • 2-3 cloves garlic, minced
  • 6-10 fresh basil leaves
  • 1/2 tsp. dried oregano
  • Pinch of salt & pepper, to taste
