In our small town series for Crisfield and Princess Anne, we got explore beautiful Somerset County. But, did you know that this unique slice of heaven on Delmarva, is not the only Somerset in the world? There are actually 36 Somersets – each one unique, but similar to the others. Today, we learn all about those discoveries by talking to Akulah Agbami, Author of “A Symphony of Somersets.”

It’s Wellness Wednesday and we’re turning our attention to prevention. When it comes to the battle against addiction, the Worcester County Health Department certainly has their weapons drawn. Back in April, we met a couple responsible for spreading hope around Milton. Sometimes, that’s all it takes. One or two words on a sign and our spirits are automatically lifted. Just like those signs in Milton, Delmarva residents can look forward to seeing signs all over the peninsula with the hashtag #STILLFARMING. It’s a way to celebrate farmers and their unstoppable efforts to keep the agricultural industry going even in the midst of a pandemic. We talk with Board President of the Delaware Farm Bureau, Richard Wilkins, about the #STILLFARMING movement and what the bureau is hoping consumers will learn from this.

A recipe similar to take-out that takes less than 30 minutes to make and only pennies a serving? We’ve got it. Chopstick Veggie Fried Rice is just as good as Chinese take-out. With a veggie fried rice base to start, make it your own by adding any protein that you like. Check out the recipe below:

What You’ll Need

  • 2 tablespoons plus 2 teaspoons vegetable oil, divided
  • 2 eggs, lightly beaten
  • 2 cloves garlic, minced
  • 1 (16-ounce) package frozen peas and carrots, thawed
  • 3 cups cold cooked rice
  • 1/4 cup soy sauce

What to Do

  1. In a large skillet over medium-high heat, heat 2 teaspoons vegetable oil. Add eggs and scramble, then break up scrambled eggs into small pieces. Remove from skillet and set aside.
  2. Heat the remaining 2 tablespoons oil in skillet; add garlic, peas and carrots and cook 3 minutes. Add rice and soy sauce and cook 3 to 5 minutes or until heated through, stirring frequently. Stir in scrambled egg pieces and cook 1 to 2 additional minutes, or until heated through. Serve immediately.
