Black-Eyed Pea HummusIngredients5 teaspoons kosher salt2 teaspoons baking soda16 ounces dried black-eyed peas8 cups chicken stock3 tablespoons minced garlic in a jar6 tablespoons good quality extra-virgin olive oil, plus extra for garnishing2 tablespoons tahini3 tablespoons fresh lemon juicelemon zest of 1 lemon3 teaspoons favorite hot sauce½ teaspoon smoked paprika, plus extra for garnishingkosher salt and freshly ground black pepper to tastecrackers, pita chips, or assorted vegetables to accompany the hummus1. Soak beans overnight in a large bowl with enough water to cover the beans by at least 2-inches. Add 3 teaspoons of salt and 1 teaspoon of baking soda to the mixture. After the soaking process, rinse the beans thoroughly.2. In a large pot, add the chicken stock, remaining 2 teaspoons of kosher salt and teaspoon of baking soda, beans and enough water to cover the beans by 2- inches. Cook approximately 45 minutes or until the beans are very tender. Drain mixture and set aside.3. In a medium bowl, blend the black-eyed peas, garlic, olive oil, tahini, lemon juice, lemon zest, hot sauce, paprika, salt, and pepper. If the hummus is a little thick, add a touch of chicken stock or olive oil. If the consistency of the hummus is not velvety smooth, strain through a fine mesh sieve.4. Place hummus in a small serving bowl. Using the back of a small spoon, make a circular indentation in the hummus. Add olive oil so it floats on top of the hummus. Add a few sprinkles of paprika and freshly ground black pepper. Serve with pita chips crackers, or fresh vegetables.
