Today is Martin Luther King Jr. Day. He was an American clergyman, activist and leader in the African-American civil rights movement. King is best known for his role in the advancement of civil rights using nonviolent civil disobedience. He has become a national icon in the history of American progressivism and hundreds of streets in the United States have been renamed in his honor.

As an adult, have you ever had those moments when you stop and think to yourself, “I wish someone would have told me that” or “I wish I knew then what I know now” moments? There is a group on Delmarva that’s working hard to prevent our youth from finding themselves in too many situations like that. The President of Junior Achievement of the Eastern Shore, Jayme Hayes, joins us in Historic Studio D to talk about Junior Achievement’s goal of preparing youth for the future. They have an event coming up where you can help our students succeed. The Junior Achievement Ladies Night 2018 is Feb. 9 at 6 pm at the Fountains in Salisbury, Md. There will be a fashion show, music, shopping and more at the event. Get your ticket here.

It’s only the middle of January, but many young ladies and men are already thinking about prom. For the ladies, they may be sifting through magazines, checking out boutiques online, or searching store racks with hopes of finding the perfect dress. However, not all high school seniors can afford a prom dress, but that doesn’t mean they have to miss out. Volunteer with the group Promise is Susan Ward and she joins us on the Mid South Audio Stage today.  The Promise Project is a nonprofit organization that provides dresses for girls across the Eastern Shore. Through generous donations they are able to provide dresses and other beauty services for girls who need assistance. Students should see their guidance counselor for details on eligibility and to receive a voucher for the event. We also show off some of the prom dresses with a fashion show on the Mid South Audio Stage. The group will be handing out dresses on Feb. 10 from 10 am – 3 pm at the Unitarian Universalist Fellowship Church in Salisbury, Md.

We’re making a dish in the kitchen today with sardines! For some, that might have them scrunching up their noses, but Chef Hari Cameron, owner of Grandpa Mac and a(MUSE.) in Rehoboth Beach, is leading the charge and sharing a delicious recipe with us today. We’re making a superfood walnut sardine pasta sauce.

Super Food Walnut Sardine Pasta Sauce (Makes four portions)

Ingredients:

  • 1 Can Spanish sardines (deboned)
  • 2 oz. 56g extra virgin olive oil
  • 3 cloves of garlic smashed
  • 1 Bulb fennel medium diced
  • 1 Yellow onion minced finely
  • 3 chili peppers sliced thinly
  • 1/3 cup 40z walnuts
  • 1 pinch of fennel pollen
  • 1 pound 454g fresh Bucatini pasta
  • 1 splash of fish sauce
  • 1 splash of Tabasco
  • 5 tablespoons 37.5g of freshly grated breadcrumbs toasted in olive oil
  • 1 bunch 40g of mint
  • Pecorino to serve

Method:

  1. Cook the Bucatini in water salted to 1% for two minute or until tender with slight tooth.
  2. Meanwhile, heat extra virgin olive oil in sauté pan and add garlic, onion, fennel, chili peppers, and walnuts for a few minutes.
  3. Do not let the garlic burn. Then add sardines smashing them with a wooden spoon until they disintegrate into the pan. While pasta is
    cooking add a 4-ounce of pasta cooking water to the sauté pan.
  4. Then drain the pasta and add to the pan. Do not rinse pasta. Finish cooking the pasta in the sauté pan until it is al dente.
  5. The cooking water will reduce and help for the sauce with the other ingredients. Add splash fish sauce and Tabasco. Finish pasta with ripped mint, and top with breadcrumbs, pecorino, and another splash of olive oil.
