Sean visits the Delmar Public Library to play Jenga made out of 12-pack cardboard soda containers, and learn all about their upcoming fundraising event. The Hubcaps are performing on Sat., Nov. 5 from 7 pm-11 pm at the Wicomico Youth and Civic Center. Tickets are $50 and the proceeds help fund the new library they are building. Buy your ticket here. Southeast Asian Style Sweet and Spicy Pineapple Rice Yield – 2 -4 servings
1.5 cups -cooked white rice or any rice that you like1- 12oz can coconut milk -regular not fat free1 TBSP Olive oil3/4 cup chopped fresh pineapple or canned drain juice1/4 cup- dice sweet red pepper1 tsp – chopped lemon grass -optional1 tsp – fresh ginger -fine chopped or grated1/2 tsp -chopped garlic3 ea- green onion chopped1 TBSP or to taste Sriracha sauce2 tsp light brown sugar or agave nectar to taste1-2 limes juiced2 TBSP fresh cilantro choppedSalt and pepper
In a medium size staute pan over medium high heat add oil, lemon grass, ginger, garlic, red pepper anb green onion stir for a minute. Then add pineapple, coconut milk, sugar or agave nectar, Sriracha and rice – cooked for a proxy 2 minutes untill heated throgh. Taste and season with salt and pepper. Turn off heat mix in lime juice and cilantro -serve
