Joyce Nichols is on a mission to help others enjoy eating healthy meals. She joins us in the DelmarvaLife kitchen today to make chocolate avocado mousse and a ginger mocktail.
Chocolate Avocado Mousse
Ingredients:
- 1 cup of Greek Coconut (or other non dairy) yogurt
- ¼ cup of 100% Cocoa (or Cacao)
- ¼ cup of Agave nectar or 100% maple syrup
- 1 avocado pitted
Instructions:
- Place all ingredients into a food processor and whip until smooth and creamy. That simple!
Ginger Mocktail
Ingredients:
- ¼ cup lime juice, freshly squeezed
- 1 teaspoon zested ginger
- 9 drops stevia
- 18 ounces sparkling water
Instructions:
- Combine all ingredients in a jar and stir
- Pour over ice into 2 cocktail glasses and garnish with lime wedges
- Serve
