Beebe Healthcare wants to thank you for your 100 years of support! They are having a two-day festival to celebrate – the 100th Anniversary Beebe Healthcare Family Fun Festival. The event is free for kids and all Beebe volunteers and staff members. Wristbands are $5/2 -day wristband for all other adults. There will be so much for the kids to do including canvas painting, musical and dramatic entertainment on two stages, storybook reading time, many games and activities, and a free gift for all the kids who attend.

Douglas Ruley from Bluecoast is in the kitchen today making buffalo cauliflower with blue cheese buttermilk crema. We also learn about the Southern Delaware Wine, Food, and Music Festival. The event is Sat., Oct. 8 from Noon-4 pm and tickets are $75. There is also a silent auction at the event and proceeds benefit Children and Families First, the Food Bank of Delaware, and Rotary’s Global Polio Eradication Initiative.

Buffalo Cauliflower with Blue Cheese Buttermilk Crema

Ingredients

½ cup buttermilk

½ cup sour cream

4 tbsp. blue cheese crumbles

½ fresh lemon squeezed

3 tbsp. olive oil

¼ cup of your favorite hot sauce

½ fresh lemon squeezed

1 head cauliflower- broken into florets

¼ cup celery hearts or micro celery for garnish (optional)

Method

Heat oven to 400 degrees.

For the crema- in a small bowl add buttermilk, sour cream, blue cheese crumbles and lemon juice. Mix well. Chill until ready to serve.

For the cauliflower- in a large bowl combine cauliflower, hot sauce, lemon juice and season with salt & cracked pepper. Toss and spread on baking sheet. Roast for 25 minutes until cauliflower tender and slightly browned on the edges.

You can serve cauliflower hot or at room temperature.

Spread blue cheese crema on a large platter. Place cauliflower in the center of the platter and garnish with any extra blue cheese crumbles and baby celery.
