Today on DelmarvaLife – Jimmy and Lisa are in Cape Charles

Lisa and Jimmy are certainly getting their steps in across the very walkable Cape Charles. All of Delmarva is invited to do the same. It’s as easy as lacing up those sneaks, taking in those sweet views, and getting to stepping with the Lower Shore walking tour. We talk with Director of Preventative Services and Communications with the Somerset County Health Department, Sharon Lynch, about “Walktober.”

While the crew takes in the view around Cape Charles, they’re probably noticing all of the beautiful Crepe Myrtles around the town. They’re everywhere and there’s a very good reason for that, which we will learn about soon. But first – let’s learn about these beautiful plans. We have an alternative to mashed potatoes – Mashed and Smashed Cauliflower. See, potatoes aren’t the only vegetable worth smashing. Creamy and nutritious, this dish is perfect for when you want a change of pace. Check out the recipe below:

What You’ll Need

  • 2 heads cauliflower, cut into florets
  • 5 tablespoons butter
  • 1 tablespoon sour cream
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

What to Do

  1. Place cauliflower in a large pot and add just enough water to cover.
  2. Bring to a boil over high heat; cover and cook 15 to 20 minutes, or until tender. Drain well and place in a large bowl.
  3. Add remaining ingredients and mash until mixture is well combined.

Note

  • For a quick-and-easy baked version, add 1/2 cup Parmesan cheese and 4 beaten eggs to the mixture and place in an 8-inch square baking dish that has been coated with cooking spray. Bake in a preheated 350 degree oven 30 to 40 minutes, or until golden and set.
