Recipe for Banana-Butter Blender Muffins
1c natural peanut butter (or other nut or seed butter of choice)2 lg eggs2 medium sized very ripe bananas1/2 tsp baking soda1 tsp vanilla1 tsp cinnamon2T honey (optional, may also use maple syrup)Optional toppings: dark choc chips, coconut, raisins, craisins, chopped nuts
1. Preheat over to 400 degrees2. Place ingredients in the blender and blend until well mixed3. Pour batter into a greased muffin tin4. Add a variety of toppings into each muffin spot and stir5. Cooking time varies- approx 10 mins for regular muffins, 8 minutes for mini muffins
