We previously had Chris Agharabi, Owner of Ava’s Pizzeria & Wine Bar in St. Michaels and Cambridge on DelmarvaLife, and he prepared possibly the greatest meatballs ever cooked here on the show!
It was only fitting that we would bring him back for more delicious dishes. He shows us how to make chicken Marsala and how to prepare shrimp on a Himalayan salt block.
Chicken Marsala
Execution Time: 7 minutes
6 oz chicken cutlets
3 oz spinach
4 oz spaghetti
2 Tbsp butter
3 oz mushrooms
1 tsp garlic
1 tsp shallots
1 Tbsp culinary cream
1/4 cup marsala wine
salt & pepper
1) dredge chicken in flour with thyme, salt, pepper and red chili flakes and place into heated, oiled pan
2) sear until golden brown and flip; add garlic and shallots
3) add mushrooms and deglaze with marsala wine
4) saute spinach and shallots in a separate pan, adding salt & pepper
5) reduce sauce and add pasta and parsley; mount butter and culinary cream
6) remove from heat and allow sauce to come together
7) plate with two slices of toasted bread
Shrimp on a Himalayan salt block
marinade (Double this recipe. Use half to marinate)
1:4 cup parsley chopped
1/2 cup parsley chopped
1 ounce lemon juice
1 tbsp Shallots chopped
2 cloves chopped garlic
Pinch crushed red pepper
Himalayan salt block 500 degrees
