Scones
Ingredients: 2 cups All Purpose Flour; 1/2 cup Granulated Sugar; 1 & 1/4 teaspoon Baking Powder; 1/4 teaspoon Baking Soda; 1/4 teaspoon Salt; 1/2 cup Butter Cold and Cut into Pieces; Either 1/2 cup Dried Cranberries or 1/2 cup chopped Dried Apricots or 1/2 cup Chocolate Chips or 1/2 cup Almonds; 1 teaspoon Vanilla or almond Extract; 2/3 cup Buttermilk
Preheat at 400F.
Mix together the flour, sugar, baking powder, baking soda and salt in a large bowl.
Cut butter into small pieces and blend it together with the flour. Mixture should look like coarse crumbs. You could also do this in a food processor pulsing it a couple of times;
Stir in the cranberries or dired apricots etc.
Add the extract to flour mix.
Add the buttermilk as needed, until the dough comes together. Be careful not to over-mix. Takes almost all of the 2/3 cup. Use the little bit left for brushing on top of scones before baking.
Transfer to floured surface and knead lightly a couple of times. Flatten the dough into approx. 6″ round circle and about 1 and 1/2 inches in thickness.
Bake 18 minutes until golden brown.
