- Two Mahi Mahi Fillets
- 1/2 Cup Orange Juice
- 1/2 Cup White Wine
- 1/2 Cup Toasted Pine Nuts and Almond Slivers
Toast Pine Nuts and almond Slivers over low heat in an oiled skillet, turning frequently – Approximately two minutes.Heat a lightly oiled skillet to almost smoking. Sear Fish 45 Seconds on each side. Add Wine and Orange Juice, reduce heat – simmering until the liquid starts to turn to a glaze. Top with the roasted nuts and serve.Blueberry Salad
- 1 Pint Fresh Blueberries
- 1 Avocado, Diced
- Fresh Salad Greens or Spinach
- 1/4 c. Blue Cheese Crumbles
- 2 tbs. Chopped Walnuts
- 2 tbs. Red Onion Diced Small
Dressing
- 1/4 c. Olive Oil
- 1/2 tsp. Apple Cider Vinegar
- 1 tbs. Honey or Agave
- Dash of Salt
- 1 tbs Chia Seeds
Combine the salad ingredients into a bowl. In a separate bowl mix the ingredients for the dressing, stirring until it thickens. Toss dressing with the salad ingredients.
