taught Jimmy and Lisa how to make a delicious and summery seafood and salad combo… seared mahi mahi and a fresh blueberry salad chock full of flavor. If you’d like to try the recipes at home, here’s what you’ll need!Seared Mahi Mahi

  • Two Mahi Mahi Fillets
  • 1/2 Cup Orange Juice
  • 1/2 Cup White Wine
  • 1/2 Cup Toasted Pine Nuts and Almond Slivers

Toast Pine Nuts and almond Slivers over low heat in an oiled skillet, turning frequently – Approximately two minutes.Heat a lightly oiled skillet to almost smoking. Sear Fish 45 Seconds on each side.  Add Wine and Orange Juice, reduce heat – simmering until the liquid starts to turn to a glaze. Top with the roasted nuts and serve.Blueberry Salad

  • 1 Pint Fresh Blueberries
  • 1 Avocado, Diced
  • Fresh Salad Greens or Spinach
  • 1/4 c. Blue Cheese Crumbles
  • 2 tbs. Chopped Walnuts
  • 2 tbs. Red Onion Diced Small

Dressing

  • 1/4 c. Olive Oil
  • 1/2 tsp. Apple Cider Vinegar
  • 1 tbs. Honey or Agave
  • Dash of Salt
  • 1 tbs Chia Seeds

Combine the salad ingredients into a bowl. In a separate bowl mix the ingredients for the dressing, stirring until it thickens. Toss dressing with the salad ingredients.
