Draper Media Director of Marketing and Promotions is firing up frittatas in the DelmarvaLife kitchen and talking about season premieres of some of your favorite shows.

Zuchinni Dill Frittata2 tsp butter2 cups (approx) chopped zuchinni (2 medium)2-3 scallions, thinly sliced1-2 tsp adobo seasoning 4 eggs3/4 cup egg whites2-3 TBS chopped dill2 TBS water2 TBS grated parmesan1 TBS grated parmesan (for topping)

 

Preheat broiler. In a medium bowl, whisk together eggs, egg whites, dill, water, and 2 TBS parmesan.

 

In a pan that is oven safe (cast iron preferred), melt butter and cook zuchinni 2-3 minutes over medium-high heat. Add scallions and adobo; cook until the zuchinni is tender (but not mushy). Add egg mixture and cook approximately 5 minutes, slightly pulling the edges of the mixture toward the center and tilting the pan so that the uncooked mixture on the bottom is moved to the sides of the pan. Once the mixture is 2/3 cooked, sprinkle 1 TBS of parmesan on top and place the pan under the broiler. Cook until the eggs are done (pulling away from the edges) and the top is browned. Makes 4 servings, approx. 150 calories each

 

Everything But the Bagel Frittata2 tsp butter1/2 cup red onion, small dice2-3 scallions, thinly sliced1-2 tsp adobo seasoning4 eggs3/4 cup egg whites2-3 TBS chopped dill2 TBS water1-2 TBS everything bagel seasoning2-3 TBS capers2-3 TBS crumbled feta4 oz smoked salmon, broken into bite size pieces

 

Preheat broiler. In a medium bowl, whisk together eggs, egg whites, dill, and water.In a pan that is oven safe (cast iron preferred), melt butter and cook red onions, scallions, adobo over medium-high heat until the red onions are tender. Add egg mixture and sprinkle in everything bagel seasoning, capers, and feta. Spread salmon throughout. Cook approximately 5 minutes, slightly pulling the edges of the mixture toward the center and tilting the pan so that the uncooked mixture on the bottom is moved to the sides of the pan. Once the mixture is 2/3 cooked, place the pan under the broiler. Cook until the eggs are done (pulling away from the edges) and the top is browned. 4 servings, approx. 175 calories each
