Shawn Hardy, manager of The Salty Wave in Harrington, Del., joins us in the DelmarvaLife kitchen to make shrimp quesadillas.

Shrimp Quesadilla- makes 4

  • 8- 7″ tortillas
  • 1- pound cooked shrimp
  • 1/4 cup of pico de gallo
  • 1 cup cheddar/Monterey jack cheese
  • Pinch of shrimp seasoning
  • Peppers and onions to taste

Place 1/4 pound of shrimp, table spoon of pico, 1/4 cup of cheese and peppers/onions to taste on 4 tortillas.  Season with shrimp spice. Place on hot pan and add a top tortilla to each quesadilla.

Pico de gallo

  • 2 cups of diced Roma tomatoes
  • 1/2 cup of diced red onions
  • 2 oz chopped garlic
  • 2 oz chopped jalapenos
  • 4 limes of fresh squeezed lime juice
  • 1/4 cup of finely chopped silantro
  • Teaspoon of salt
  • Teaspoon of pepper
