Shawn Hardy, manager of The Salty Wave in Harrington, Del., joins us in the DelmarvaLife kitchen to make shrimp quesadillas.
Shrimp Quesadilla- makes 4
- 8- 7″ tortillas
- 1- pound cooked shrimp
- 1/4 cup of pico de gallo
- 1 cup cheddar/Monterey jack cheese
- Pinch of shrimp seasoning
- Peppers and onions to taste
Place 1/4 pound of shrimp, table spoon of pico, 1/4 cup of cheese and peppers/onions to taste on 4 tortillas. Season with shrimp spice. Place on hot pan and add a top tortilla to each quesadilla.
Pico de gallo
- 2 cups of diced Roma tomatoes
- 1/2 cup of diced red onions
- 2 oz chopped garlic
- 2 oz chopped jalapenos
- 4 limes of fresh squeezed lime juice
- 1/4 cup of finely chopped silantro
- Teaspoon of salt
- Teaspoon of pepper
