Mediterranean Relish:
- 1 c. diced tomatoes
- 1/4 c. chopped olives
- 1/4 c. chopped kalamata olives
- 1 1/2 t. capers
- 1 red onion
- 1 clove garlic, minced
- 1/4 c. red wine vinegar
- 1 T. sugar
- Fresh basil, salt, & pepper
Cucumber & Mint Cous Cous:
- 1 box plain cous cous
- 1 cucumber, diced
- 1.4 c. fresh mint, minced
