Jennifer Kendis Anderson, local author and chef, joins us to talk about how she’s written over 35 books and also teaches us a peanut butter cookie recipes and a chocolate fudge recipe. Jennifer has cerebral palsy, but that definitely hasn’t slowed her down!

 Peanut Butter Cookies

  • 1/2 c. Butter
  •  1/2 c. Peanut butter (creamy)
  • 1/2 c. Sugar
  • 1/2 c. Brown sugar
  • 1/4 tsp. Salt
  • 1 egg
  • 1 1/4 c. Flour
  • 1/2 tsp. Baking powder
  • 3/4 tsp. Baking soda

In a small bowl add flour, baking powder, baking soda, and salt.  Set aside.  In a large bowl beat together butter, peanut butter, brown sugar, sugar, and egg until creamy.  Gradually add the ingredients from the small bowl(The flour mixture).  Blend well.  Roll the dough in 1 1/4 inch balls.  Place 3inches apart on a lightly greased baking sheet.  Dip a fork in flour (not the flour from the ingredients) mush the fork across the top of cookie pressing it flat.  Make a crisscross pattern with the fork on the top of the cookie.  Bake in a preheated oven at 375 for 10-12 minutes.  For easiest results after mixing dough but before rolling dough refrigerate to harden dough maybe 15 minutes.

3 Minute Fudge

  • 1 lb powered sugar
  • 1/2 c. Cocoa
  • 1/4 c. Milk
  • 1/2 c. Butter
  • 1 tbsp. Vanilla

In a bowl add all the ingredients except the vanilla.  Microwave for 3 minutes until the butter is melted.  Stir until smooth.  Stir in the vanilla.  Spread into a greased 8in pan.  Let cool.  Cut into squares.

There are many things you celebrate when you’re in high school. For Laurel High School athletes, they’re still celebrating! Director of Bulldog Spirits, Matt Parker, tells us about this upcoming event that the Laurel Historical Society is helping to put together. Bulldog Spirits is all about getting as many Delaware sports hall of fame members, all state athletes, championship coaches and others that were important to Laurel athletics together and honor them.  Attendees can expect dinner, drinks, live game footage, vintage photos, displays, and more, and anyone interested in the history of Laurel is welcomed to attend. Bulldog Spirits is Saturday, Jan. 21, with a cash bar beginning at 5:30 pm and dinner at 6:30 pm. The event is at the Laurel Fire Hall and tickets are $35 a person.

Nobody wants to be involved in a car accident, but it happens. If you’re involved in one, it can be hard to focus on what needs to happen next. We’re launching a six-part series today to simplify the sometimes complex process of what can happen after you are in an automobile accident. Attorney Kelly Dunn Gelof, managing partner of the Tunnell and Raysor Law Firm in Sussex County, joins us to tell us more.

Yesterday on the show, we gave you some tips on how to get organized. Today, we have a few more DIY’s that take less than one minute to complete. WBOC Multimedia Journalist, Lauren Holloway, has five one-minute DIY projects so we set the timer and she puts together unique stationary, a glitter mason jar, painted car keys, wine cork jewelry bar holder, and a photo display.
