How in the world could we forget Karen Richards? She’s the actress at Clear Space Theatre in Rehoboth Beach who wow’d us as Dolores in Cabaret. She knows just what it’s like to perform on that stage. Today, we’re meeting another actress who will be making her Clear Space Debut in a “Streetcar Named Desire.” We’re talking with Executive Director, Wesley Paulson and Actress, Sami Griffith about the upcoming play.

When you think about comfort food, what comes to mind? Macaroni and Cheese? Mashed Potatoes? Chicken Pot Pie? Pot Roast or Meatloaf? And, when you think about all of these comfort foods, you’re probably also thinking, not-so-healthy food. Well, not anymore. The Worcester County Health Department has a new cooking series, “What’s Cooking in Worcester”, featuring healthy versions of some our favorite comfort foods. Today, we’re making cheesy cauliflower nachos. Check out the recipe below:

Ingredients

  • 1 medium head cauliflower cut into florets
  • 2 tsp. olive oil
  • ½ tsp. ground cumin
  • ¼ tsp. sea salt or Himalayan salt
  • ¼ tsp. chili powder
  • ¼ tsp. garlic powder
  • ½ cup shredded Monterey jack or pepperjack cheese
  • ¼ cup chopped tomato
  • ¼ cup chopped red onion
  • ¼ cup chopped orange bell pepper
  • 1 medium jalapeño seeds and veins removed (optional), sliced (can add a second if desired)
  • ½ cup mashed avocado
  • 2 Tbsp. finely chopped cilantro

Instructions

  1. Preheat oven to 425º F.
  2. Place cauliflower on baking sheet. Drizzle with oil. Sprinkle with cumin, salt, chili powder, and garlic powder; toss gently to blend. Spread evenly on baking sheet.
  3. Bake for 30 to 35 minutes, or until tender-crisp and golden.

  4. Top evenly with cheese. Bake for 3 to 5 minutes, or until cheese is melted.
  5. Top evenly with tomato, onion, bell pepper, jalapeños, avocado, and cilantro; serve immediately.

Beefed-Up Rice Casserole is just the right amount of beefy and cheesy. An “all-in-one” dish, this recipe is perfect for those last minute weeknight dinners. Check out the recipe below:

What You’ll Need

  • 1 pound ground beef
  • 1/2 pound Italian pork sausage, casings removed
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked rice, warmed
  • 1 (24-ounce) jar spaghetti sauce
  • 8 slices mozzarella cheese
  • 2 tablespoons grated Parmesan cheese

What to Do

  1. Preheat oven to 375 degrees F. Coat a 2-quart baking dish with cooking spray.
  2. In a large skillet over medium-high heat, brown ground beef, sausage, garlic powder, salt and pepper for 8 to 10 minutes, or until cooked and crumbly; drain off excess liquid.
  3. In a medium bowl, combine spaghetti sauce and rice; mix well. Place half the mixture in the baking dish. Top with half the meat mixture, then place 4 slices mozzarella cheese over the top and sprinkle with 1 tablespoon Parmesan cheese. Repeat layers.
  4. Bake 30 minutes or until heated through.
