Vegetable Lasagna Recipe:

Add minced garlic and olive oil in a large pan on low heat until the garlic turns brown.

Add in chopped fresh vegetables, sauté on medium heat.

Add 1C Ricotta cheese, salt and pepper to taste

Reduce heat to low, add Parmesan or Romano cheese mix, pour 1/3 of it into a baking dish.

Cover with cooked lasagna pastry. 

Repeat with another 1/3 of vegetable/cheese mixture and add a layer of lasagna pastry and thin layer of Mozzarella cheese.

Repeat the final 1/3 of mixture, adding lasagna pastry and thin layer of Mozzarella cheese.

Top with Alfredo sauce or marinara sauce.

Bake for 30 minutes at 425 degrees covered.

Remove cover and add a layer mozzarella cheese & heat till cheese is melted.

Let cool for 20 minutes and it’s ready to eat.
