Blackened Scallops Recipe:
 

1) Start with fresh sea scallops, pat them dry.
2) Use blacking season of choice, place each scallop into the seasoning
    using a spatula, gently place scallops face down in a frying pan, that you            wiped with oil. Without moving the scallops, let cook for 2 minutes before
    you flip them to cook for 2 minutes on the other side.
3) Using raw spinach, season with lemon and pesto in a bowl.
4) Plate spinach, add scallops, garnish with fresh crab meat and enjoy.
