Seared Mahi with Mediterranean Relish
 
8oz portion of Mahi Mahi
1 tomato
1/4 cup pepperoncini
1/4 cup black olives
2Tbsp capers
1 lemon
6 Basil leaves
Salt and pepper
 
Preheat a pan on high heat.
Add oil then season the fish and place in pan. Meanwhile chop the tomato, and add to a bowl with the capers, olives and sliced pepperoncini. Zest the lemon and add the juice. Chiffon and add the basil and combine with the relish.
 
Serve and enjoy.
