Basil Lemon Shrimp Orzo Recipe:
Cooked Orzo (Take ½ cup uncooked and cook as per directions for orzo)
1 pound deshelled raw shrimp
20 grape tomatoes sliced in half
2 teaspoons minced garlic (Or two minced garlic cloves.)
½ cup feta cheese
2 teaspoons olive oil
½ teaspoon grated lemon rind
1 tablespoon lemon juice
¼ teaspoon salt
¼ teaspoon pepper
¼ cup chopped fresh basil
¼ cup white wine (Optional)
Mix all ingredients into a large bowl. Mix well and place in an oven safe bowl with a glass lid or aluminum foil.
Bake at 450 degrees for 25-30 minutes stirring once during baking.
Serve hot!
