Lobster Sauté Recipe:
2 Tbsp butter
4oz picked lobster meat
1/2 cup chicken stock
1 cup heavy cream
Combine all ingredients in pan over medium high heat until thick.
Serve with toasted garlic bread.
Shrimp & Scallops Suicide Recipe:
2tsp clarified butter
1Tbsp salted butter
2Tbsp flour
4 scallops
8 medium shrimp
2oz dry sherry
1/2 cup chicken stock
2 cups heavy cream
1/4lb linguine
Coat the pan with clarified butter and put over medium high heat. When the butter is hot add the shrimp and scallops and cook until halfway done. Add salted butter and when melted add the flour to make a roux. Add chicken stock, sherry and cream and reduce until sherry cooks out. Toss with pasta and serve in a bowl.
